Zucchini Graten
Don't you just love zucchini? I do...there are so many ways of preparing it, and it's always readily available at the veggie market here. Another bonus is that it's very low calorie, yet filling---great if you're trying to lose a few pounds, like me right now. ;) I made the recipe using light margarine and skim milk to cut calories, but the original version is richer, so I'll put that one up.
Ingredients:
4 zucchinis (about 3 cups, chopped)
salt, pepper and garlic powder to taste
2 tablespoons butter
2 tablespoons flour
2 cups milk
salt, pepper and freshly grated nutmeg to taste
freshly grated parmesan cheese
Preparation:
Cook zucchini, I did mine in the microwave to save time and make fewer dishes, but you could steam it too.
Place in an oven save dish.
Preheat the broiler.
While the broiler is heating, prepare the bechamel sauce.
Melt butter over medium heat, then whisk in flour.
Gradually add milk, whisking constantly and cook until the sauce thickens.
Season with salt, pepper and nutmeg.
Pour bechamel over zucchini, and sprinkle with parmesan cheese.
Broil 5-10 minutes until golden.
