What kind of side dishes do you serve with them?
Hi Deb! I usually just serve a Spanish style mixed salad...lettuce, tomato, cucumber, asparagus, corn, red onion, avocado and tuna. I make fries for A and the kids too. :)
These look good. Do you use a deep frier or just a deep skillet?
Those look amazing. Croquettes are a very popular "take away" food in Italy, and are usually made from rice with mozzerella in the middle, binded with egg and rolled in bread crumbs. I prefer the arancini (oranges) which were mashed potatoes with mozzerella in the middle, but these look absolutely fabulous and I never thought to go outside of my italian realm!

When I was growing up, croquettes were known as "salmon patties". Since I've met you, they've become the company worthy croquette. I love you for that. ;)
Wow, thanks everyone! :) Brian, I usually use a skillet, because it requires less oil and less clean up afterwards, though a deep fryer is fine too. Kate, the arancini sound fabulous! canarygirl i just read your blog about croquettes. would you believe my grandaunt makes croquettes and we're asians. well we're from the philippines and we were under spanish rule for about 400 years that is why it is known in this part of asia. i haven't eaten croquettes for a long time so when i saw your blog it made my mouth water. going to make these for our weekly family get togetheer.
