Fresh Cheese and Tomato Bocata
Breakfast....the most important meal of the day....the one that gets your body in gear and prepares you for the day. A local Deli gave me the idea for this sandwich, they had just cheese and tomatoes....but if you add some fresh oregano, freshly ground black pepper, red wine vinegar and extra virgin olive oil...you get a whole new kind of deliciousness.
Ingredients:
1 whole grain baguette
1 ripe tomato, sliced
4 ounces (100 grams) "queso fresco" (fresh cheese)
oregano leaves
freshly ground black pepper
extra virgin olive oil and aged red wine vinegar to taste
Preparation:
Slice baguette lengthwise and layer cheese and tomato.
Season with oregano and pepper to taste.
Drizzle the other half of the baguette with evoo and vinegar.
Slice and serve.
